“Ratatouille with Garlic Sweet Potatoes & Chicken Medallions! When your fridge is running out of room because you’ve been buying veggies for the past couple of days. Finally decided to use up all the mushroom, eggplant, zucchini & tomatoes and it just happen to turn into this!! I literally come up with a dish as I’m cooking! And the chicken was marinated with my homemade Dill-Basil Pesto for two day so it was really flavorful! I’m extremely happy how dinner came out!
More and more and more #potatoes. I've picked several pounds over the summer, and two of the plants' foliage seems to have died back. I thought that was the direction in which they were all heading, but the other have started flowering again. Potatoes are a wonder!
